There aren't really that many AI jobs to begin with (not many companies actually need sophisticated ML models) and AI tooling is so simple that most people with a normal CS degree can pretend to know what they're talking about. Currently, a lot of AI jobs is just "tape together an LLM api and an existing website". That does not require much specialist knowledge at all and many people want in on the hype.

Not sure how it is in Germany, but most ME grads seem to either get a job as manufacturing/quality/process engineers (in many cases performing work that's actually meant for industrial engineers or even business administration grads) or as electromechanical technicians since there are not that many actual mechanical design jobs here in Mexico.

A bunch of universities around where I live have decided to merge their electrical and mechanical engineering degree programs over to chimeric mechatronics engineering degree programs, I guess mostly because Zoomers/Alphoomers are not really interested in HVAC work, "tough" courses like Thermodynamics and Heat Transfer, and only care about robots and muscle cars/motorcycles.

IT companies adopt sillicon valley's interview style where they expect you to recognize a collatz conjecture problem while the slary is slightly above minimum blue collar wage. And you're expected to work until 8PM and ready to answer calls on the weekends. All the 90s kids got scammed into learning STEM by the government, but there's no infra or businesses except for outsourced IT firms so they have to take it anyway.

I'm a Financial Controller with 6 years of experience working at a major bank. Most of my work is creating recurring reports (P/L statements, balance sheets, various other KPI reports), making sure the accountants do their job right and helping/advising upper management with their decision making. In terms of software I use MS Office (duh), SAP, SQL, Tableau, and some Python scripts I'm not supposed to use but do anyways. Basically anyone who understands basic math and has some common sense should be able to do my job, but a lot of people lack that.
Lucky for you though a lot of huge tech companies are starting to move entire departments to Vietnam now because even pajeet labor has become too costly for them. Expect a sizeable growth in slop good morning saar type tech jobs in your country in the next 5 years.
