I hate them, maybe they look find in some flyover shithole, but on the east coast where we have tons of actual historic architecture like this, those McApartments are nothing but a blight.
Older buildings were built in a time where labor was cheap and ornamental elements didn't add much costs.
That is no longer the case. To build the more aesthetic buildings today would be very expensive, and trying to micromanage designs to suit aesthetic preferences just leads to a decline in construction production and higher housing costs.

looks like every new bar and building in st petersburg, florida. its cool that its becoming more dense, parking lots are being filled in, and transit is improving but they are also monolithic plastic looking eyesores that take up an entire city block. the contrast between the new apartment blocks and the older more varied and intricate architecture is glaring.
The funny thing is these sun belt apartment buildings are populated by people from the northeast.
Fundamentally a product of the collapse of social expectations for people to grow up and follow what we could deem a normal life path. The very idea of there being a "correct" way to live makes people very uncomfortable so everyone is on their own. Left to their own devices, people end up delaying marriage, avoid having children, and live in a state of arrested development. When I look at places like the OP picture (brewpub with BOARD GAMES! Axe throwing bar! Barcade!) it reminds me that I see way fewer children around in public than I did even 20 years ago. Also it seems like there's a lot more drinking.
The small historical apartments are basically illegal due to double staircase requirements in the vast majority of the country.
That being said, the bigger apartments will still be built in states with staircase reform (like Texas, Virginia, Montana) because the scale makes it more cost-efficient per unit.

Surely some things are more important then investors making a profit? If people are ok with on shoring jobs despite the higher prices, then what wrong with returning to a method of construction that provided not quality housing but a real living wage for million of American craftsmen?

These buildings would be very expensive if you tried to replicate it today. Also likely illegal in USA due to building codes- these are 4 story buildings with only one staircase for example.
Also, these apartments probably just aren't that nice compared to what people want today. They're likely smaller than people want, without a balcony, they have no amenities. This is true of the retail spaces on the bottom as well.
So basically they don't get built because they cost too much and wouldn't actually yield that much rent, even if it was able to be built.
We got an area like that, 2000+ apartments built in the 2024 and 25 construction seasons in a town of 150K and NO FUCKING GROCERY STORE. Only urbanist on the aesthetic level, no actual conveniences of urban life. I don't got a problem with the architecture though, it is what it is and we kinda ran out of old warehouses and schools to retrofit. Add a fuckin TJs and it'd be Poppin.

Its not just about profit, its about whether or not the project works at all. When you add costs, the developer doesn't just make less profit, it just doesn't get built. If you're adding costs, it needs to yield higher rent to make up for it.

They can't just add a grocery store. You have to attract a grocery store, and grocery store chains are very picky when selecting new locations.
Keep adding more apartments, and it makes it more likely a grocery store will come. You can't expect to build a neighborhood with all the urban amenities in 2 years.

Rowhouses are nice. Even some new rowhouses are nice, but the ornamental features (windows, door frame, at the top) in the building you posted would simply run up costs today.
Rowhouses are nice, but in the most desirable areas are going to be very expensive. Here is an example of some newer ones in Charlotte, and they're each worth $1.4M. So you can't just build rowhouses instead of apartments, ideally you'll build both, its not really an either or.

This is correct, that apartment building probably has a garage and the surrounding streets are completely full up of parked cars.
Also, no one's mentioned it yet, but developments and areas like in OP's pic are 99% populated by unmarried adults in their mid 20s to late 30s. They're playgrounds for middle-class-to-affluent adults with no families or children. Serviced by upscale grocery stores, photocopied brewpubs with the same Airspace aesthetic, with the same mix of trendy Asian and Mexican restaurants.
Also, these kinds of areas tend to have very transient populations, people will live their for a limited amount of time and anyone who wants a family will moe to the suburbs like their parents.
