as for governments apple is x10 times more transparent than anyone else. recently the UK tried to hack iclouds of apple customers using a new law to force apple to give them access. so they just cancelled the encrypted icloud feature for the UK. any other company would have made a special UK version that allows the hack there and kept telling the customers there that their data is secure while it was noe. apple is telling their customers they cant secure their data and they should seek encrypted storage elsewhere.

ive never used an apple product in my life mostly because of the limitations they force on their own devices vs regular pcs/laptops/phones but in terms of how they deal with governments they mog every other company by far.
